In the stillness of our cellars

The vision of this family has always been focused on a long ageing of the wines: 4 years minimum for the non vintage Brut , 7 years for the vintage wines. A great wine claims a great patience. There is no haste. This is all the paradox characterizing the Grumier family: a life going on at a fast pace associated to the art of patience and observation. Or the idea of a mountain stream which would turn into a peaceful river in some places.

All in all, the stock represents 250 000 bottles waiting quietly to be disgorged. Some bottles are still shaken up by hand often by Guy who is committed to helping for some of the tasks.

The long ageing provides complexity to the Grumier champagnes. They provide a great richness to Fabien’s vintages. As for the family their force of character is registered over the time.

We wish to create a natural link translating a nice harmony between the material of the fruit and the salts of the soil. From our reserve wines to the wines of the year, in barrels or in vats, with malolactic or not, Pinot Noir or Chardonnay, plots of the low side or plots of the hillsides facing the south or the east, old vineyards; such is the overall set of our materials for the composition of our 9 unique pieces….And to give way to the full expression of our champagnes, we made the choice on light or zero dosage at the disgorging.
